I particularly interested in variable stars and most of my observing sessions are taken up with taking an estimated brightness readings of several easily identifiable variables. I do this by comparing their brightness with other stars within the field of view, each with a well known and stable brightness. I find this technique, pioneered by the American Association of Variable Star Observers (AAVSO), easy to do and that it creates meaningful data quickly.
